Cooking for Boys: Beer Cheese Burger

It’s summertime. It’s hot. And I’m hungry. Actually, it’s beyond hungry… I’m hangry. Hangry is when hunger takes over and your stomach becomes very angry at you and you find yourself tearing through the kitchen cabinets and ripping the doors off the hinges. There’s a house full of boys that have been working hard all day so I start to go through my mental recipe rolodex. What do boys want to eat? What do they like? Meat. Cheese. Beer. Grilled things. And that’s pretty much it. And how do you satisfy insatiable man hunger? With man food. Enter the beer cheese burger.

Start out by making your burger patties. I used 3 lb ground beef with minced onion, garlic, salt and pepper. But use however much ground beef you need for all of those hungry dudes. Form the meat into uniform patties. About 5″ wide and 3/4 inches thick with an indent in the middle. Remember, depending on the fat content, they’re going to shrink a bit once they hit the grill. Have the boys start grilling up the burgers. Mix it all together and form into thick patties. Throw those suckers on the grill.

While the boys are outside grilling, enjoy the few moments of peace and quiet you have to yourself in the kitchen. That’s nice, isn’t it? It’s time to start making beer cheese!

Here’s what you need: 

  • salt and pepper
  • 2 Tbsp butter
  • 2 Tbsp all purpose flour
  • 1/4 tsp mustard powder
  • 3/4 cup beer
  • 1/2 cup half and half
  • 1 1/2 cups shredded extra sharp cheddar cheese
  • 1 Tbsp horseradish

Here’s what you do:

Here it goes. Time to make the beer cheese. Melt the butter in a saucepan over medium heat. Stir in the flour and mustard powder. Let that cook about one minute, making sure it doesn’t brown and turn ugly. Whisk in the beer (and then drink the rest yourself… you’ve earned it). Bring that to a simmer then whisk in the half and half. Simmer and stir, simmer and stir until it’s thickened (about 4 mins or so). Stir in the cheese. I added a bit more to thicken it up even more and then I added the horseradish.

Toast the buns on the grill. Throw on your burger, top it with the melty, delicious beer cheese sauce, chives, homegrown sliced tomatoes or whatever kindof topping you wanna throw on there.

Then sit back and enjoy that tasty, juicy, melty meat snack you just created out of thin air. And enjoy the silence, because no doubt there will be a whole lot of eatin’ and not a lot of talkin’ going on.
